today was a success in baking experimentation! I'm happy to say my lemon-blueberry cupcakes were a hit. - everyone devoured them.
What was my creation? It was a buttery lemon cake with lemon zest and juice to give it a bright flavor and a sprinkle of blueberries in the batter. It was baked to perfection and then topped with white chocolate frosting and a single blueberry.
After tasting the combo fresh from the oven I knew it was a perfect match. The lemon cake with the white chocolate frosting had the familiar taste of lemon-poppy seed cake drizzled with icing. The lemon and blueberry was a bright summer flavor and lightened the richness of the white chocolate frosting.
I'll be sure to bake up another batch of these. It's definitely making my summertime baking menu!
What's coming next? I don't want to do anything heavy since it's summer, so I'll either do another fruit inspired cupcake or a pink velvet cake....yes, I did say pink. Why have red when you can have pink?
My home-baked treats always are as natural as I can get them, so that means you only get the stuff you know in your product (flour, sugar, butter, eggs, etc.) Nothing funky or artificial. So what will I be using to color my cupcakes? Beets. Yes, you heard right again. It's just a matter of me finding them. I found radishes at the grocery store, but I think people aren't too hot on beets. It's a great natural food dye, and who couldn't use an extra dose of veggies in their dessert? Don't cringe, you know you love carrot cake;)
